Chinese Herbal Chicken Soup

Tonifying herbs are often cooked into soup because of their pleasant taste. The chicken in the soup brings out the qi tonifying and blood nourishing properties of the herbs. The soup can be used for someone recovering from a serious illness or on a weekly basis as a general tonic. It is a nice way to incorporate Chinese herbs into one’s diet.

Soup Mix Ingredients (included):

Huang Qi (Astragulus root, in tea bag); Bai Mu Er (White ear fungus); Xi Yang Shen (American ginseng); Dang Shen (Codonopsis root); Shan Yao (Chinese yam); Long Yan Rou (Longan fruit); Gou Qi Zi –(Goji berry); Lian Zi (Lotus seed); Qian Shi (Euryale seed); Bai He (Lily bulb); Bei Sha Shen (Glehnia root); Shu Di Huang (Rehmannia root); He Shou Wu (Fleeceflower root); Chuan Xiong (Lovage root).

Other Ingredients (not included):

Chicken/chicken stock; garlic; onion; ginger; salt; carrots; celery; tamari/Braggs/ toasted sesame oil, mirin/sherry/wine.

 

Cooking Directions

In a large pot, soak the herbs in chicken stock or water for 20 to 30 minutes. Add chicken, garlic, ginger and sea salt. Bring to boil, cover and reduce to a simmer for 45 minutes. Add the fresh vegetables and simmer for 10 more minutes. Remove from heat and stir in Tamari, sesame oil, and mirin. All herbs are edible except the Huang Qi which is in a separate tea bag for ease of extraction from the soup after boiling.
